OYSTER PACK

1 Med onion, chopped
2 stalks celery, chopped
2 v. soup. chopped parsley
1 1 / 2 sticks butter
1 teaspoon of tea. Poultry seasoning
1 / 2 tsp. Pepper
7 C. bread crumbs, or a package. Stuffing mix
1 pt. Standards Section (Smith) oysters, hard-deleted
1 / 4 cup oyster liquid
1 teaspoon of soup. Lemon juice

Sauté onion, celery, parsley and spices in butter last for several minutes. Place bread crumbs in a large bowl and throw with the onion mixture and remaining ingredients. Cool. Stuff bird just before roasting. Makes 8 cups.

Cranberry: Follow the recipe above, except add 1 1 / 2 cups fresh cranberries and 1 / 3 cup sugar with the onions, celery and parsley. Fry for 5 minutes. Add or remove the oysters and lemon juice.

2 cups boiling water
1 / 2 cup butter, cubed
10 cups cubed day-old bread, toasted
1 can (8 ounces) oysters, drained
1 / 2 pound bulk pork sausage, cooked and drained
1 / 2 cup fresh parsley
3 / 4 cup poultry seasoning

Stirring to give the soup in a bowl with boiling water and let inutes for 5th in a Dutch oven, melt butter. Stir in bread cubes and mix with onion soup. cover and simmer for 5 minutes, stirring occasionally, gently stir the oysters, parsley, spices, meat of poultry.

Transfer to a greased 2-1/2 baking. Cover and bake through at 375 for 40-50 minutes or until heated.

Yields: 9 cups or enough to fill to £ 8.10 for Turkey.
